As I was making dinner tonight Little came in and told me, “They need to make a potato and onion perfume. It smells amazing in here. It might lead to world peace.” OK, doubtful it will lead to world peace, but this is a SUPER simple recipe that everyone in my family LOVES.
Sorry about the randomness of the quantities. It’s very flexible….
Sausage. We use hot and mild Italian, and sometimes chicken sausage, (but NEVER chicken apple sausage because it’s terrible)
red or other colored peppers
salt and pepper
Preheat oven to 425.
Chop the sausage into 4ths and set aside. (You’ll see mine in the sweet princess plate near the back of the photo…)
Chop the veg and potatoes. Make them roughly the same size. Not huge, not tiny. Again, mine are in the photo….
Put all the veg and potatoes on a baking sheet, and sprinkle some olive oil on them. Smoosh them all around. You don’t need a lot – because when you add the sausage it’ll grease it all up. So keep it light. Just enough to keep everything from sticking. Salt and pepper the pile liberally.
Roast for 15 minutes.
Pull from the oven. Stir. Add sausage.
Roast for another 15 minutes.
Pull from the oven. Stir. You can decide from here how much more time. I usually add another 10-15 minutes.
Let it cool. Eat it. All of it. Yummy. Eat more. OOOHHHH yumm!!!! Fight over the last bits. Rub your tummy. Smile a lot.
