Homemaking Tuesday – Another CHEAP Breakfast

This morning, after much deliberation, Big and I decided to make a Puffy Dutch Pancake for breakfast. Once we started I knew I had to share. I’m always looking for more breakfast recipes – and this one is cheap, a fall back from my youth, easy, tasty, and uses stuff you normally have in the kitchen. Perfect!!

PUFFY DUTCH PANCAKE
Preheat the oven to 425. While it’s heating, put a pie plate in the oven with 4 T ($0.32) of butter in it. The original recipe calls for 5 1/3, but I find 4 is fine.

While the butter is melting, whisk together:
3 eggs ($0.30)
1/2 cup milk ($0.12)
1/2 cup flour ($0.05)

Top With:
Lime or Lemon juice – I use about 1 T per slice, but I buy the concentrate and dilute it a little ($0.10)
Powdered Sugar ($.10 – a wild guess – I use between 1/2 and 1 T per slice)

A delicious meal with fruit and some milk (or in my case this morning, a VAT of coffee was needed! LOL!!).
